Cowboy Caviar
2 cans black-eyed peas-drained
1 can corn-drained and chopped
2 jalapenos-1 with seeds 1 without
1 tomato
1 green pepper
1 red pepper
1 onion
1 can Rotel
1 large bottle low-fat Zesty Italian Dressing
combine all ingredients, cover and refrigerate at least 24 hours, drain, serve with chips
for fun add: black beans, black olives, minced garlic, and 1 red onion
